After a long tradition in cava making, the passion for wines of Joan Carol led him found Cellars Carol Vallès in 1996. He decided to settle in the old farmhouse of Can Parellada acquired by his grandparents more than 100 years ago. With the indispensable help of his wife, Teresa Vallès, Joan Carol began to commercialize the cavas that the family had been producing for years.

We are 100% wine growers.We only produce what we have personally grown at our vineyard. We project the wine from the land, and we only feel winemakers when we start the grape harvest. We work our vineyard carefully, in a sensible, empathic and calm way.

Jaume Giró i Giró is one of the most historic cellars of Sant Sadurní d’Anoia. It is known for the manufacture of hand produced Cavas in very limited quantities.

Currently the company is directed by the enologist Ramon Giró Gramona, the third generation of the family who has impelled it forward in the manufacture and quality of his products:
